Yes. It will tarnish without sealant.

Q: What sealant do I need to use to protect color changes, and keep from damaging newly gilded surface?

Are used an acrylic garnish with a satin finish and it’s been about four years and it still looks pretty good. I not only leafed gold but also copper and bronze

Q: can it be put in the oven?

Don't see a reason why one could not put the foil sheet into an oven in principle as long as temperature is low enough and duration is short. I have seen this foil used with low temperature polymer clay but not high fire clay. Also be cautious heating anythings where adhesive was used to adhere the foil. I will note that it is clearly stated that this foil is not intended to be used as or on food - you need to search foils edible foils which are food safe.
