will a pex pinch/cinch tool for the one eared pex clamps work correctly with these or do you need a different pincher?

The Pex cinch tool did not work for mine. Side cutters or something can work, but best to get the punch tool they sell for them. About $10

Will these fit 3/4" & 1/2" PEX?

My understanding is that pex uses their own clamp style, requiring a special pex type clamp. The pinch clamps here in the have a different design than the "official pex", and use a different clamp pliers, however it would serve the same purpose as the official "pex" clamps. The pinch clamps are designed to uniformly wrap around a hose and pex sort of falls into this category. Look on youtube and others, you'll see people using pinch clamps or cinch clamps and if done properly will work fine.

How do you determine what size to use?

You pick the size that best fits the hose your installing. after assembling then you pinch it tight.
