'If we could just get along' is fantasyland. China's gov't has no interest in fair working conditions or the environment. if these things are important to you, you should avoid supporting them. I prefer USA made products but gladly purchase from other countries - just not China if I can avoid it. Thank you to those that report the county of manufacture when it's not clear on the site.

How much does the kettle have to be filled before the temperature can be read for it?

The thermometer displays the temperature the moment it comes in contact with the water. That would vary according to the temperature of the water you put in. I typically heat one 6 oz. cup at a time, using room temperature, filtered water from a Brita. A six ounce cup of 20 degree water takes approx. 2-1/2 minutes to reach 200 degrees. The amount of time would increase or decrease in proportion to the amount and temperature of the water you begin with. Hope this helps.

Is the probe portion of the thermometer made of the same quality stainless steel material as the rest of the kettle?

I am not a thermodynamics physics expert, (I just play one on TV), but it seems to be a denser material than the rest of the kettle. It is a solid piece of stainless steel, probably designed to conduct heat to the thermometer.
