Q: What is the taste like compared to soy sauce? Better? Saltier?

It is much sweeter & not salty. As someone who grew up eating Japanese food & Kikkoman soy sauce, it does not hit the same note because of the sweetness & lack of depth. It tastes really good but more along the lines of a thin teriyaki sauce. I like it, but to me, it tastes nothing like soy sauce. I just pretend it's teriyaki & since I have to avoid both gluten & soy, it's my only option. I order the more economical gallon jug. If soy isn't an issue, Tamari sauce tastes more like traditional soy sauce. =)

Q: I bought a bottle from my local grocery store and upon opening, found a chunk of something floating on top. Is this normal? It looks like a small mushroom.

Could be. I shake mine. It has some brown that floats to the bottom. Haven't seen any chunks however. Apple Cider Vinegar does the same thing so it is not necessarily bad. In vinegar it is called the "mother." Could be something similar. Anything that is slightly fermented will have some floaties, if it isn't too processed. I'm assuming the date was good. Hope you like it. It is weaker tasting than soy sauce but doesn't have the wheat and soy to which I am allergic.

The manufacturer ships the product with 2 years shelf life. (This is marked on each product as "Good if used by xx/xx/xx" or "Expires on xx/xx/xx", If opened and refrigerated, the product continues to have the same two year shelf life that is controlled by the date stamped on the product. So now worry's. You can purchase the gallon, open and refrigerate for up to 2 years. Thanks, TheBlueZone
