Yolélé Fonio is grown without pesticides or herbicides. But it is not yet certified organic.

Q: Is this the same as lacciri (aka west african sorghum couscous)?

Couscous is pasta made from grains. In North Africa they make couscous from wheat. In West Africa they make it from millet of sorghum. Fonio is not pasta. It is a grain. But if you cook it like couscous it comes out like fine couscous. If you cook it longer it comes out like grits or polenta of farina (Cream of Wheat).

Q: I'm confused. the description says this is pre-cooked and that it is raw. how can it be both? can i get it cleaned but not cooked?

I am sorry for the confusing language. Our fonio is pre-cooked, not raw. We pre-cook to ensure food safety, and to ensure reliable light and fluffy results.
