Q: For recipes that call for GF flour, should I use 3/4c per 1c, or use the exact amount in the recipe?

I experiment with each recipe a bit, but works great in most recipes. The package says use 3/4 cup to 1, so I start there. I find that my Christmas roll out cookies does better with the 3/4 cup then I can add flour as I roll out. Pound cake is lighter & moister with 3/4:1. BUT my oatmeal nut & traditional chocolate chip cookies does better with 1:1 (or almost 1:1). Sorry no exact rule of thumb.

Q: Are the flours used in this blend the Superfine rice flours?

Yes, it is a blend of their superfine brown and sweet rice flours. Also has tapioca starch, cornstarch, potato starch, xanthan gum. Hope that helps :)

Q: Do bagels made with this taste like regular bagels?

I have only had success using this gluten-free flour for tea breads, muffins, scones or pancakes. I would not expect bagels or other breads to turn out well. Gluten-free people may say it works, that they have the recipe, but I think they’ve forgotten what real bagels taste like!

Q: Anyone have success with cupcakes using this flour? We also have to make them vegan so a little worried.

Vegan cupcakes might need some testing out. This GF blend makes great cupcakes and tea breads, (banana bread). But, I use dairy and eggs.
