Takes a good edge
An excellent knife for the kitchen; not super hard steel so it's easy to sharpen and I'd rate the flexibility of the blade at around medium. I've marked it down 1 star because for me the handle is too slim and not grippy enough, not a problem for domestic or occasional use but being a commercial fish filleter a beefier grip would be way better, especially as I have to wear gloves.

Grate knife
Got this for my 87 year old dad. He needed a new knife as he had warn out his others. He really likes the flexibility of the blade he has used it for filleting fish. He recons its one of the best knives he has had (he has been doing this since he was 10) we just need to catch more fish to see how long the knife keeps it edge.. that will be the real test.
