Every Japanese (should) own this
Living up in Japan as a kid I always saw TV drama and movie moms cooking with this but our household never had it. Ironically I decided to buy it once I moved to Japan. This is perfect for anything involving boiling, simmering, or glazing. I didn't realize how much time I'd wasted waiting for water to boil. It conducts heat very well. It's not meant to be used for sauteing, although it works well if you want to saute a bit before adding water to deglaze it.I'm left-handed so having the notch on both sides is a big plus.My only regret is that I didn't buy it sooner.
