No it does not come with the gas,You have to buy this separately

How do you dispose of the greasy water when camping? Where do you put it if its full of grease from bacon/burgers etc?

Greasy water from burgers is animal fat... i'm sure will not arm the environment like any animal who dies in the woods...

Is there a way of converting the gas system to accept other cylinders, or a pipe to another gas cylinder?

No small gas can, it does last a long time for its size.
