I see these are sold individually... are two required, or is there any reason why two would be better (except volume)?

You can use 1 or 2. 
I used 2 on a large sports field to project  the sound in different directions to get better coverage over a wider area.

The answer is no, not exactly. Let me explain. My Adastra speakers still work after more than two years of outdoor usage, however these are now looking very rusted and ugly. Mine were white and I took the grills off to sand and repainted them. 6 months later they are rusted again. Does not seem to impact sound quality, just looking great.
