Great!
Well we made mochi. The kids helped. There are so many different recipes for mochi and I took one that seemed the easiest. I’ve got to say it was very sticky and needed a lot of needing and extra flour and the kids loved the edible slime like texture. In the end though it turned into lovely soft and light dough and was delicious wrapped around whipped cream and jam or fresh berries.

Excellent flour for gluten intolerant people
I have used this flour to make cakes and they were delicious and moist. I used GF rice flour mixed with a lesser quantity of this flour. So in a recipe calling for one and a half cups of flour I used 1/2 cup of this flour and 1 cup of GF flour. I have shared the cakes with gluten-intolerant friends, with no problems reported, but because it is not categorically gluten-free have not shared it with friends who are definitely coeliac. Hop
