I hate this knife.
I had bought some cangshan knives in the past for an ex-girlfriend and was always jealous of them after I gave them to her because they were really sharp awesome knives. They were a different style with black typical looking handles. She did have trouble with them rusting shortly after she got them, but let me tell you that girl also left those knives laying in the sink after use- even after she already knew that they were rusting, so she wasn't really taking great care of them.I'd been wanting a set of Cangshan knives for years after that. So I ended up buying this sweedish steel chef knife but couldn't really afford to go crazy on the whole set, when I won't even use some of the knives much. I obsessed over whether what knives to buy and which ones for DAYS. I was SUPER excited about this knife. I ordered this from amazon and then ordered a Nakiri knife in the same style and honing tool in same style from Cangshan's website. The amazon sold chef's knife did come pretty quickly. I took it out of the box and quickly ran to clean it up and slice a potatoe with it to try it out. It turns out after all of my obsessing and all of my excitement I absolutely hated holding the knife. I'm a female and my hands are medium to small and this knife just seemed really heavy and I didn't like the way that the opening handle felt. I immediately knew that I did not knot like this style of knives. So I immediately went and canceled my order from the cangshan website, which thank goodness they did cancel without any problems. NOW... when I went to return this specific knife, they are charging me about $5.50 for shipping which I think really sucks. I often use amazon because they've always had great policies about returning items that you don't like, but this company... not so much. Now I'm screwed into having to figure out if I'm going to keep a crap knife that I don't actually like or just pay the stupid shipping and not feel like I'm being fully refunded. So... I'd say take a pass on these knives. I wish I would have bit the bullet and just bought the whustof instead.
