Q: How small a canvas or board can I use on this easel?

The limit of size of board is to the large side. You can go as small as you want. I think the tallest is about 16", but the supports will touch each other, so small is not a problem.

Q: Does the tripod also fit in the bag?

No, the tripod has its own carrying bag.
