What thickness of wood should be used for assembling the clamps?

I'm using 1 5/8" square hardwood 30" long. The bracket will not allow wider sizes. Best panel clamps I've found. Remember you need one clamp every 12".

Can I glue up (5) 2x10's flat together with these clamps or in sections (3 boards then 2 boards and these 2 section together) total 46-1/2" wide

These aren't actually complete clamps. They are the hardware required to BUILD a pair of clamps. You provide the boards to complete the clamps. That being the case, you are only limited by the length of boards you supply. So yes, you can clamp the width you mention, all in one go. If your project is more than, say, 3 feet long, you might consider buying 2 sets of these, to better distribute the clamping force. I hope this helps.
