In addition to Hank Shaw's abundance-focused and empowering "Hunt, Gather, Cook" ethos, this book reminds us that venison may be the most truly global food: There are native species of deer that have sustained people on every green continent for all of human history. With Hank's equal respect for wild foods from every corner of the earth, this book expands SO far beyond steaks and burgers (though it provides best practices and great tips for these items too). Because of BBM I try a new way of making venison from a different country nearly every week, and absolutely every recipe has been excellent. With every deer I try new butchery techniques or different cuts with ideas I've gotten from BBM, which has made me better able to harvest and use more of every animal. I've purchased at least a half dozen copies of this book for friends and family, and always keep a spare in my house to give away when the opportunity arises. If you smell what Hank is cooking and you like what you learn, I'll add that the Hunt Gather Cook Facebook community is another great place to learn, swap techniques, and discuss new ways that you may wish to enjoy wild foods. He has also written many other equally excellent books about other wild foods such as fish and birds.

Must have for beginners and advanced wild game cooks
This book is a must have for those who want to utilize the animal they harvested to the fullest. To me it's about respect and going back to our roots. Many of the foods here are ones that people would usually turn their nose up at or think of a "gross". Shaw does an amazing job of laying out how to butcher a large game animal and then goes into how to use all the parts. Each chef/hunter has their own way of doing it but it never hurts to add new skills, such as how to prepare the stomach for tripe. I also love the inspiration from different cultures, he doesn't stick to just one. You will see things from Mexico to Africa and Eastern Europe. Recipes I would have never otherwise tried. I as surprised at how simple some of the recipes are and how delicious that can be. I like to just flip through the book and read it when I'm not planning my next dish.I'm sad I waited so long to get this book and will probably be buying all of his books.

This book is for all cooks.
This book is certainly for hunters who want to take care of the fruits of pursuit and harvest. It is for anyone who would like to know how to prepare antlered game in a way that might not have come to mind. It’s also for people who might want a new way to cook—those who are looking for recipes that might be outside their usual kitchen routine. Yes, this book is about preparing denizens of the forest, but Hank Shaw does two other great things in this cookbook. If you read this book, you’ll know how all sorts of cultures choose to prepare said game, but you will also know how to use those ideas, techniques and flavors on whatever ingredients you are lucky enough to find.If that’s not enough, the man writes with a sense of humor and wit that make this book a great read and not simply an instruction manual.Cheers,Pete

Amazing!!
This book is amazing! A frequently used book in my arsenal for everything venison ♥️If you are looking for new ways to cook venison other than just grinding it, this will be a dream come true… I actually changed completely how I butcher my deer because I love using these recipes for larger cuts 😄(The braised shoulder recipe is to die for 😉)Buy it! You neeeed this book if you are a hunter, married to one, or just want to wow folks with your venison dishes 😄

Every hunter should own a copy!
I didn't start hunting until I was in my 30s. I was immediately frustrated with a lack of information about butchering and cooking wild game. I researched many wild game cookbooks, but most simply dealt with the loin and usually involved a crockpot. Turns out most people in my area (central Florida) see deer meat as two backstraps and a bunch of sausage. I wanted to know how to cook individual muscle groups and how to get the most out of my meat. This book answers all that and more. With articulate descriptions and detailed images, Buck Buck Moose opens up a whole new world of culinary possibilities. Every hunter should have a copy. There is no excuse anymore to dump your game at a processor to get ground into piles of questionable patties. Show your game the ultimate respect by treating it with care and making it into one of the incredible looking recipes in this book. After all, if the promise of the World's Greatest Meat Stick doesn't appeal to you, you probably shouldn't be hunting.

Very creative!
I bought this as a gift for a deer hunting family friend. I was very impressed with the creativity of the recipes, and think that anyone that buys this will love it. I plan to buy another copy for someone else. If I hunted, I would definitely buy myself one....maybe I will anyway, and use beef?? I have a very large (700+) cookbook collection and I think this one would rank in the top 5-10%.
