Basically perfect for cheap.
If you are more of a chopper and less of a rocker when it comes to your knife work then you need a santoku. Of all the nice ones I’ve ever used I find myself reaching for this more often. The grip is solid, the blade is well made and thin enough to do delicate work, just enough flex. The hollow ground breaks do help keep veggies and such from sticking too bad but it’s not perfect. There is enough rise on the handle to allow for knuckle clearance when in use on a cutting board and the grip is excellent even if hands get wet. Highly recommend

Best bang for buck Santoku
This is a very good knife. I have used the Chef's knife from Victorinox and the knife can maintain good sharpness for about 3-4 cooking sessions, before you need to strop and hone it. This Santoku is lighter than the Chef's knife and the handle is thinner than the Fibrox pro style handle (that is what my chef knife has), so it makes easier to grip for people with small to medium sized hands.The knife came sharp out of the box and effortlessly chops through vegetables like potatoes and onions. The steel is such that it does not need to be immediately wiped off like high carbon steels, so a little bit of clumsiness is ok when working with this knife. More expensive knives from my collection can hold edge longer, but their steel is also harder, so it takes longer to sharpen or hone those. This is a good compromise between the low cost $10 knives and much higher $70+ knives, I would say.One thing to be mindful is that the knife's blade is thin, so using it on harder and larger foods like butternut squash or pineapple would be a bad idea. The chef's knife is better suited for that.

A cut above
A year or so ago i realized that buying individual knives was better than buying a set. Sets were what i bought in the past. With sets I ended up with knives I didn’t like. So I stumbled on this knife brand and have been happy with my choice of knife. Super lightweight, cuts and washes well. I use a sharpener frequently as I can’t stand a full knife. These knives sharpen really nicely and hold the sharpness easily. I also purchased blade guards for keeping in drawer. Knife blocks are ugly so i keep in a drawer.

Surprised at the knife's performance
I cook a lot, which means I do a lot of food prep. I've always been a proponent of buying quality knives and a big Zwilling J.A.Henckels fan. Last year, I purchased a small Victorinox paring knife for my RV kitchen. The more I used it, the more I liked it. I purchased this santoku because of that positive experience. Once you get used to the fact that you don't need much weight to slice properly, this knife really begins to shine. I have since purchased their 6 inch chef's knife and I'm glad I did. I'll keep my Henckels but I won't be buying any more. You can't beat the Voctorinix knives for the price. Also, lots easier to keep sharpened.

Better than aniticipated
I tried a Santoku knife for the first time this winter when we rented a condo in FL. The brand that was there was a Henckels and I was amazed how it slid right through anything I tried it on. So I knew I'd want my own when I got home. I did a little research and chose the Victorinox. Alhough I like a little heft to my knives, I felt a santoku would be better in a lighter weight. I've used it for 2 days now and it's better than I anticipandted! I eat at least 2 large salads every day so I am really enjoying using this knife. And for the price.... I mean, really.Update: I've now had this knife a month and I have to add this warning: this knife is EXTREMELY sharp so use the care one would use if one were cutting with a razor blade! I was slicing half of a cantaloupe, the cantaloupe slipped on my cutting board and I ended up with 9 stitches in a finger as a result. I am over 60 and know my way around a kitchen and good cutlery so I am cautious - but felt I needed to emphasize how very sharp this is.

sharp and firm, good kitchen knife
wanted a Santoku knife and was watching this and another, I have had good experience with Victoinox, and this was no disappointment, some folks say its light, don't know, having no other to compare it to. blade is sharp, good grip oin the handle and its firm, no wobble or unexpected flex. cuts really well, from carrots to cheese.I would have liked one with all the logo's imprinted on it, but there was enough to assure it was a true Victoinox. since the others all listed as shipping the same model, this one was the better deal

Great for all cooks!
Very easy to hold and chop or slice. My husband likes to chop for my recipes and he is very particular about his knives! This is his favorite!
