Excellent slicer, capable of very thin meat slices.
Well balanced knife, feels great in the hand and performs flawlessly. Sharp out of the box and only required a simple maintenance honing after slicing 15 lbs of beef and 8 lbs of ham!

I'm really disappointed with Miyabi Artisan series after I purchased several knives ...
At this point, I'm really disappointed with Miyabi Artisan series after I purchased several knives from this series. Include this one they all have some flaws either on handle or blade. Miyabi Artisan series might be great for show case, but definitely not for everyday usage.If you really like the Japanese style of Miyabi series, I would recommend either go Miyabi Kaizen series or top of the line Miyabi Birchwood series, which I have not find any problem from those series.BTW I returned all Miyabi Artisan series I purchased.
