Q: The description indicates that it's oven safe to 500 degrees but the booklet that comes with the pan indicates to keep cooking at low heat, not high?

1st time use, I put it in the oven @ 450° with a ham & beans. No problem. Do not EVER put on a hot burner or in a stove empty! It will ruin the enamel. Wash it only with dish soap, a sponge with a scrubby side is all you need for cleaning. Just oil the exposed cast iron on the pot & edge of the lid with a little cooking oil on your finger before 1st use. Doesn't take much. Do not put in the dish washer.

Q: Is this a pre-seasoned pot?

No, there are instructions in the box advising to oil and heat for a bit. Not sure why, since there is enamel inside and out and no cast iron is exposed except for a very small rim around the edge of the pot. I followed the instructions and did not see a difference though.
