The item description says this is posable - does that include the wings?

Yes, but the wings do not open up fully. They only open up like 20%. The feet are fully posable. See review photos for more info. Thanks!

Can the wings move or are they attached to the bird's side?

The wings are partially attached to sides of the body. I think it would be really hard to detach them. It's more part of the body with the tips of the wings free of stitching. Hope that makes sense.

Could you unstitch the wings so they are moveable?

I would say you can not unstitch wings. They are slightly moveable almost half way up but that's the best you could do. I hope this helps. Tom.
