What is the difference between the edition of  "software only"  and "with wii motion plus" ?

This game will not work with the original Wii controller unless you have a Wii Motion Plus Adapter installed. When installed, the adapter does add to the length of the controller and will require a new silicon cover (optional, but preferable). You can buy generic controllers having roughly the same length of the original Wii controller with the Motion Plus built in. Some people I know prefer the longer length controller provided by the adapter, but I think this is just a case of "liking what you are used to". It is much more difficult to remove the longer silicon cover used with the motion plus adapter, making it much more difficult to change or charge the batteries, unless you have an induction charger or rechargeable batteries that use just a USB cord without a docking station. A word of caution: I believe most of the listing for the used game with the software and the adapter are incorrect in that is highly unlikely they will include both the software and the adapter. The two reasons for this are: one, the adapter alone costs $7 to $15 on Amazon so the cost for both should be north of $20,  reason two is: with a large number of sellers having this item priced too low, it seems likely, Amazon had the default listing for this item set to include the software with the adapter. Sellers of software rarely if ever seeing extra items included with the software they sell failed to notice this and thus made the mistake of selecting the default listing. As big as Amazon is mistakes are going to be made.

Does it work for a wii mini?

Yes, it does work on the wii mini. I recently purchased the wii mini and it came with the motion plus already installed on the controller and it came with Mario Kart game. I rented Wii Sports Resort from my local video store to see if it worked, and it does. Just finished trying each game on it. :) So I plan on going ahead with purchasing my own copy of Wii Sports Resort now that I know it does work.

We have an rvl-001 wii from 2006.  will sports resort work on this?

Wii sports resort should play on all original wii consoles regardless of it being first model released.
