Yes, they don't actually have a coating on them. They are pure glassine, which is pure pressed paper.

what weight of velllum is used?

Most glassine bags are 25# basis weight. I would like to note that these are not a vellum finish bag. This is glassine paper, and has a shinier finish than vellum.

Will these take a rubber stamp? I would like to buy these and put a cute little stamp on the front, will it rub off or hold? -Thanks

If you use a smear proof ink then they will hold. You need to give a few extra seconds drying time, so don't stack them up right after stamping. StazOn is the first brand that comes to mind for smear proof ink, but there are several good ones.
