You don’t need to physically attach it. It’s a bean-bag type design with a friction material on the base. Set it on the dash and it stays where you put it.

Would this work on top of a dash mat/cover?

Yes, the unit should work fine sitting on a dash mat.

Would there be additional attachments for an iPhone?

I don’t think you would be able to attach an iPhone to this. It pretty much just holds the Garmin and that’s it. If you’re thinking about attaching a phone holder to your vent, be aware you might not be able to see the Garmin when driving.
