Sunflowers have slightly larger stems so you may have a harder time pushing them in.

The .7" would be with the cap on as the opening width is .4"

how much liquid do these hold?

Maybe 1 tbsp if you allow room for a stem. They are okay for a day or so of keeping stems fresh. Otherwise you'll need something that holds more water.
