Favorite vegan soup cookbook
Mushroom soup is to die for….wonderful, wonderful African peanut stew, Caribbean black bean and rice soooooooo yummy……I could go on. This food is so delicious everyone loves it!!!!! We batch cook so at night we open the freezer and pull out our food for the next day. So fun and convenient.

Vegan food on the fly. Super awesome.
I find that eating vegan is rough to do on the fly. I often want to eat quickly and with very little prep. This book offers a way to do just that. Chop a few things, add a few things, cook it through. How can you lose? The recipes are very well rounded with the different flavors that I often find that online recipes lack. I have made 5 or 6 of the soups out of this and found that Mark offers alternatives if you don't have the ingredients exactly, and found that substitutions are dead easy for my own creativity.I like very much. I'd buy it again! I look forward to winter and the soup eating frenzy that always follows!I wonder if he has a party foods book?! :) On to find it!

Varied main ingredients, but lacks inspired spices
Another interesting vegan cookbook is always welcome. Each recipe starts off with a promising combination of main ingredients, but fails to follow through with spices that could transform the dish from decent to inspired. If you like plain wholesome fare, this book is fine. If you’re looking for new combinations of foods, get this book and then add spices according to the reference book “A Busy Cook’s Guide to Spices” by Linda Murdock, or find a somewhat similar recipe from any of Robin Robertson’s stellar cookbooks and add in the spices she recommends.I'm glad to have this cookbook for the varied main ingredients; like who else knows about "purple Okinawan sweet potatoes"--mmm, sweet!

Variations galore!
Mark comes through once again with this new 30 minute vegan on soup. I made the Black Bean Tomato Soup with Polenta Dumplings ... wish you could see the picture! Delicious. Easy. My family loved it. My daughter told me: Mom, tell Mark this was really good" I am not one to follow a recipe to the T so I love it that you can vary the recipe as you see fit, which is what I always do, depending on my taste, or what I have available. Not at all disappointed. There are many more recipes I cannot wait to make. You do not have to sacrifice flavor to eat healthy. These recipes are a wonderful addition to your healthy cooking library.

30 Minute Vegan Soups
WONDERFUL! The soups are delicious and nourishing. Take the time to read the "how to use this book" section it will help. I am a working mom with a working hubby three kids and two dogs. I love that these recipes work and work within 30 minutes. We are basically vegetarians (we just cannot give up eggs) but giving up dairy has cut down on sugar intake (12 grams in 8 oz of skim milk) and empty calories plus you just feel better. The use of ground nuts to thicken soups is just genius. The African peanut soup recipe alone is worth the price of this book.

Proving once again that all your favorites can be Vegan!
I'm never disappointed with Mark's recipes so I knew his latest publication would be a great addition to my collection. So much deliciousness in this book! He brings new ideas to the table and recreates old favorites. I plan to continue to work my way through this book and shares the creations with those around me.Like most all recipes, these mature and become more complex in flavor if allowed to simmer, settle, or otherwise sit for a while before you enjoy them. So that being said, I love the "if you have more time suggestions"! Simple, healthy, and delicious never tasted so good!

Super soup book!!
Any book with Mark Reinfeld as an author will have healthy, FLAVORFUL recipes. Its nearly impossible to believe you can create such fantastic meals in about 30 minutes. My top 2 favorite recipes from this cookbook (I have all of his cookbooks) are African Peanut Soup and Ethiopian Stew. Wow. you can make them super hot or rather mildly spiced like I did. Both are outstanding. I have never tried a recipe that I didn't think was delicious and special. It's easy to eat in a healthy way with this as a guide.

Easy Breezy and Yummy
I bought this for a vegan guy for his birthday [ my cousin] and he finds it easy to follow and very applicable. His wife isn't vegan but she loves when he makes soups from this book. He brought me over one of the soups that was a tomato something- or- other and it was delicious!

Not an essential vegan cookbook
This is a cheaply made cookbook. Paper quality is awful. Recipes a bit uninspired. Returned another in this series. Maybe an e-version would be fine....
