The difference is the source, oyster shells vs. gypsum dug out of the ground. Both are calcium and can be used the same way.

why wouldn't I use gypsum?

Blossom end rot (BER) is an indication of a calcium deficiency. If you don't have BER, then no need to use gypsum or any other source of calcium. If you do have BER, adding a little gypsum can help solve the problem if, however, you're not over watering. Too much water can block absorption of calcium and other nutrients, and can cause BER.
