This slicer is specifically made for julienne slicing only. The blades are absolutely not removable. The two blades are used at the same time to make julienne slices. They sell a regular slicer to make flat thin slices, it has four adjustments for thickness. I own both of these slicers and they are the best I've used. Hope this helps.

The main blade is 1.27 cm wide by 8.89 cm long. The distance between the surface and blade face is .3175 cm.

I do and neither the onions nor the slicer have complained.

The cutting surface is 3 inches with the total width just over 3.5 inches.
