Q: What size breaker and wire do i need

Don't know. I have 220 volt breaker and correspondingly the wire. Pretty sure anything that can hold up to 40 ampers will go. My advice - do not overdo the size of the wiring and don't go with something crazy, like 100 amps wire. There is no need for it and it will make the installation harder.

Q: Can this be wired to a wall mounted control?

There are two models. This one has the controls on the unit. There is another model designed for use with the wall control.

Q: Is his the kind of heater you throw water on the rocks to get more steam?

Great Question! Yes you can ladle water on to the sauna rocks to cause more steam and humidity. This is a great way to enhance your bathing experience.

Q: Is temperature controlled by a thermostat knob or it has a wall mounted sensor that controls temperature by automatically turning heater on and off?

Both. You can set the temp manually, and if the unit exceeds a certain temperature it has a safety cutoff
