Will the cook top with windscreen fit a coleman two burner propane stove?

As long as the propane is hooked up on the side of the stove and not the back of the stove it will fit.

What size, width and depth is the middle top section where a grill top goes?

If the top is 13.5" deep it cannot accomodate a Blackstone or Greystone 17" Grill Top. This answer is misleading

What are the sizes of the zippered bags and how much weight can they support?

Those on the sides are roughly 12x24 inches. The middle roughly the same however it only has one storage area. There are wooden (panel) inserts that fit into the storage area to aid in maintaining form. I’ve found it to be fairly sturdy - estimate upwards to 10# each area.

Is the top waterproof? Will it hold up with water puddling on it for a period of time?

The top is waterproof. It doesn't matter if you keep the water on it for a while.
