So I didn't use the extra 1/4 c water. Simmered the mix for 8 minutes and it never did get quite as thick as the original gravy. (Seems to me the only reason this 18 oz bottle makes 1 gallon is because the gravy is much thinner and I prefer the 'PREMIUM' 30 to 60 sec. stir time rather then 'RED' 5 to 8 min simmer) McCormick tip - for richer creamier gravy substitute 1/4 of the water with milk.
