In der Beschreibung gibt es zwei Aussagen, die einander widersprechen: "- Zutaten: Alkohol, Mango Essenz, Annatto und Wasser - Beste super, realer Extrakt fällt mit würzigem Geschmack" Ein Blick auf die Flasche zeigt, dass es sich um Essenz handelt. Dennoch ist dies geschmacklich sehr lecker, zumindest in der Anwendung zum Aromatisieren grünen Tees. Allerdings wird mehr als nur ein paar Tropfen benötigt - so dass eine Flasche kaum für 20 Liter-Portionen reicht. Damit leidet das Preis-Leistungsverhältnis.

Mango Extract a must when making frozen ices like "Limbers ", and using fresh mango pulp. Great flavor inhancer!!

I purchased this to supplement the flavor when making mango ice cream and mango cream cake. A little of this goes a long way. I use 1 teaspoon when making the ice cream, basically 2 cups of heavy cream, 1 and 1/2 cups of milk or half and half, puréed mango, confectioners sugar, and a few other ingredients. Fresh mangoes can vary in their intensity of sweetness and flavor, but with a teaspoon of this extract, so far the ice cream has turned out great each time. For the cake, I use 2 cups of heavy whipping cream and add 1/2 to 1 teaspoon of extract along with the confectioners sugar, and then after the whipped cream is ready, fold in 1/2 to 1 cup of puréed mango, and I use this to cover a vanilla chiffon cake. There are many recipes for mango ice cream and mango cake on the Internet. Some call for mango extract and others do not, but a small amount of this extract can be used to enhance any of the recipes. The bottle is 4 fluid ounces, I will buy again when I need more.

Not as strong flavor as needed

First of all, do not use extracts for baking. You must use an emulsified flavoring. In other words, oil-based. Extracts are mostly alcohol-based and are not stable when heated. Extracts can also affect cold items like ice cream. They are mostly used in drinks and cool items. Do not bake with them. Do not pay attention to any of the reviews where someone was baking with the extract. It is good for things like sorbet, frostings, pudding that is not heated, flavoring cream cheese or other room temperature or cool items. It will taste good in ice cream but the alcohol content may affect the freezing point.
