Is this suitable for carving meat? I am trying to replace a 20 year old Kitchen Devil carving knife which had a scallaped blade.

I use it to cut eveything, including meat, it is only a small knife, the blade is only 4" long so won't carve a joint

Does it have a protective sheath

How thick is the blade 1mm or less ? Dose it flex when side force is applied ?

What is the size of the blade its self? Is the whole knife 18cm or just the blade ? Thanks

It was the 9.5 cms serrated knife and the 12.5cms Chefs knife that I bought not the bread knife. The length is the length of the actual cutting edge (the sharp bit) not the overall length of the metal blade and certainly not the overall length of the knife. These Sheffield made knives are brilliant and very highly fit for purpose. If Taylors say it is a professional bread knife, that is exactly what it is. And if they say the cutting edge (the sharp bit) is 18cms then guess what!
