I like really thin sausage patties
I like really thin sausage patties. (Also, hamburgers!) So, I bought a Weston Burger Press. I like to do work in bulk, so I buy a lot of meat at once, and then press it, and then freeze it. Then I can spend a few hours making patties, and then freeze them and pull them out of the freezer as needed. Well there were a couple of options for separating the patties, one was waxed paper, and the other is parchment paper. Well, I've used both, but for cooking, parchment paper is a wonderful item. I've used parchment paper in baking, and it's withstood very high temperatures in the oven, way more than you would use for cooking hamburgers / sausage. So, sausage is a pretty sticky substance, and it likes to cling to paper too. However if you use two pieces of parchment paper for each sausage patty, the frozen patties break apart rather easily. (I just 'banged' them on the counter and they came apart. ... then I just put the rest back in the freezer) However, getting the paper off of the patty is another task in itself. Well, when I fry a sausage patty, I use relatively low temperatures, (somewhere between 250 - 300) as if you use too high of a temp, then you risk burning the patty. I just want them properly cooked with a little brown on them. So here's the cool thing about this product. It worked great with my patty press, and I was able to get a nice thin patty. When I went to cook it, I put a bit of oil in the pan, and made sure the bottom of the pan was all covered, and then I threw the whole patty in the pan, including the parchment paper. As the sausage heats up, it releases the parchment paper, and you can just pull the paper out without it sticking to the patty. If you're cooking hamburger in the frying pan, at low temperatures, you can do the same thing. However, I would be really apprehensive about trying this on a fired grille, and I wouldn't recommend that at all. Probably just let them thaw a bit and then pull the paper off. That said parchment paper is great stuff, and these round parchment paper liners are very nice for making meat patties. Just a word of caution. I have used parchment paper in the oven to protect my 'Pizza Stone'. the Pizza Stone mfg recommended 500 degrees F. for baking a Pizza. I carefully monitored my oven when I did that, and when I opened the oven, it set the smoke detector off. The parchment paper was brown and crispy and really parched! A flaming grille could easily exceed 500 degrees, so I would recommend against using parchment paper directly on the grille ... so that one would remove the parchment paper before the meat goes on the grille. It's always best to be safe when it comes to fire. Fire Tragedies happen every day and bring great ruin and sadness to peoples lives. Don't let it be yours, or the ones you love.
