could someone help me with the sizing? My dental hygienist recommends a size 5 for me - and the sticks she gave me are size 83x159 mm (3.5x6.25inches)

The packets I bought were marked as M/L for the blue and XS/S for the orange. The tip goes through the gaps inbetween my teeth, so the size you need depends on how closely your teeth sit to each other.

Can the sticks and the case be recycled after use?

No unfortunately not. Always feel a bit awkward buying them. However the alternatives i.e. wooden ones have broken in my teeth before now.

are these made from silicone or plastic?

These are made of plastic with sillicone cleaning surfaces (the bit you put between your teeth)
