Do the tops fit without sliding off?

The tops fit well. There is a rubber gasket/seal around the edge of the cover, which grips the lip of the pan very well. You can tip the pan almost 45° without the cover sliding off. But of course be careful when doing this! I bought this set for RV camper use. Nice set with detachable handles for easy storage.

Will this set work with an induction plate that requires magnetic bottom on cookware ?

Yes, you can safely use this set on your induction plate without any issues.

Can you leave handle on while cooking on stove top?

Yes they fit tightly for cooking use and snap off for storage.
