Easy recipes, big bold flavours!
I have all of Rukmini’s books and have eagerly awaited the arrival of this one since January! You will not be disappointed, she’s smashed it out of the park yet again! Simple recipes with not too much washing up, ingredients that can be used in more than one recipe and flavours to die for! I’ve already made a recipe and only got the book today, lots of items readily available in a regular persons fridge and cupboards. If you hate buying an unusual ingredient that you only use once, these books are for you. Something for everyone, family friendly and still fancy enough to impress guests for dinner, plus leftovers that are great for lunch boxes. I cannot recommend this (and the whole series by Rukmini) to anyone enough!

As it says on the cover "maximum flavour, minimum fuss"
I rarely review books but this one is so good that I had to shout out and say that I have made the roasted tofu and aubergine with chilli peanut satay sauce, the all in one orzo with baked feta (with capers as no olives), the miso butter noodles with tomatoes and spring onions and the easy paneer curry. All were delicious and I will cook them again and it's less than three weeks since the book arrived and there are many more recipes that I look forward to making in the future. Enjoyable to read, good photos as with the Roasting Tin series, an all round winner

Inspiring recipes for everyday.
I love the roasting tin books, one of my all time favourite recipes is in the Green roasting tin book, the roasted tomato, red pepper and artichoke panzanella. It’s so good I could eat it every day. I got my new Green cookbook on Wednesday and have already made the linguine with courgettes and pine nuts (delicious) and the one pot pasta with harissa (also delicious). I’m planning on making the slow cooked mushroom Ragu today to eat tomorrow. I love the fact that the recipes are easy to make, regular ingredients and maximum flavour. No fuss cooking is a must for busy lives but these recipes don’t skimp on flavour. Rukmini is such a sweet lady who has put a lot of thought into each of her books, I have them all and use them all the time. I’m a long time vegetarian but my partner likes his meat dishes but it’s no hassle to make two dishes and the bonus is there are always leftovers to freeze or eat another day.

Brilliant
I’ve always been a fan of Rukmini’s roasting tin books, but it’s great to have her branch out into non-tin recipes (in this new cookbook and also the fantastic India Express) which are still intuitive, varied and delicious, with minimal fuss. Everything I’ve made from the Green Cookbook so far (feta orzo; black bean udon noodles; broccoli & cauliflower mac and cheese using ricotta & mascarpone instead of a béchamel - a gamechanger!) has been excellent. The instructions are always super clear, photos delightful, and I enjoy the commentary by Rukmini at the top of each recipe. There are so many recipes I can’t wait to try. Very much recommended!

Yet another brilliant book from Rukmini
As you can see, I am a huge fan of Rukmini’s books! I pre ordered this latest book to make sure I’d get it as soon as possible.The Green Cookbook does not disappoint. Lots of delicious looking recipes that I cannot wait to try.Rukmini’s recipes are easy to make, straightforward ( not a “1/4 tsp” of obscure ingredients type of cooking), fast and are totally DELICIOUS! There isn’t one thing that I’ve made that I haven’t liked.The Green Cookbook tells you how to make some of the recipes gluten free or vegan by making simple substitutions.Having heard Rukmini interviewed and spoken to her afterwards , she is as lovely as her books.I follow her on Instagram too @missminifer which I’d recommend also.I’d just like to point out I don’t know her and I’m not being paid to write this rave review 😂 If you want speedy, fuss free and delicious meals, I’d highly recommend this and all of her other books.

Simple
Sending the book back as i feel the recipes don't really work for me, quite a simple book, but definitely great for those who are turning vegetarian or vegan. But i have bought her other book and i hope that works out for me. But i would like to say its a lovely book, with vibrate pictures.

Trusted recipes, exciting flavours, easy preparation
I love Rukmini’s recipes. I’ve not met a dud amongst them yet. They all work so well. I love her previous books. So was delighted to purchase this as a digital copy.The recipes are brilliant. So many enticing flavour combinations. So much flavour.They’re also easy to follow, straightforward - so clever to get that balance with so much flavour. As always they’re a joy to cook.The sections are clever. I love good batch cooking and this has some lovely suggestions for this as well as dinners that become lunches.I like the stove top recipes too. So handy for the weekdays when you don’t want to turn the oven on. It’s a big yes from me all round. Thanks Rukmini. I’m excited to try more of the recipes.

Must have book
The Green Cookbook has some great recipes whether you just want some meat free meals to add to your repertoire or if you are vegetarian or vegan alike. The recipes are easy to follow and I've already picked out a few that I can see being firm favourites. I especially like the section on batch cooking. The recipes are great for getting in your 30 plants a week and perfect if you are trying your avoid ultra processed food. My husband bought me this book as he loves the recipes I cook from Rukmini Iyers' previous books.
