Will it shut off the device when battery drops to a particular voltage?

No, so be careful with this. I inadvertently left it connected to an SLA battery pack and it drained them down to a very low voltage (which is not good for SLA batteries).

What is the third pin on the side used for? The other two are labeled positive and negative

That pin has a "jumper" symbol above it, if I understand you. You can connect a DC power source like a 9v battery (I think 5 volts is the minimum, but a 9v is most convenient) to the + and - and when there is no power coming in on the "big" red and black wires all your collected data will still be displayed. I think it also lets you track low voltages through that set of pins. It takes an optional adapter to use the feature and the third pin isn't needed.

Do you write it into the circuit between the solar panel controller and the battery or can you splice into the wires and get accurate reading?

I use two of these. One I wire after the PV panels and before the charge controller. This tells me exact output from the panels. At night, it's zero and the unit is dark. The other I have wired from the output of the charge controller to my 12v devices. I can see exactly how much draw is coming from there.
