Fermented taste.
There is a good reason why mango jam is not widely available, the jar we had that was well "in date" tasted of fermented mangoes (i.e. alcohol and acetic acid), this is why mango is normally made into a chutney in which vinegar (acetic acid) is added. After a couple of uses the jar went in the bin.
