Green Chile Bible? I've got to have one!
The Green Chile Bible is on Order, have not received it yet but it will be proudly added to my collection and referred to. I've read the reviews and "must have" a copy of this, regardless of whether some of the recipes use "canned goods" rather than fresh. So what, and give us a break, will ya? Not everyone can always get fresh or even fresh frozen Green Chiles, or other ingredients, all of the time, but they still "gotta have" some green-Chile! We buy our Chiles Fresh roasted near the farms where grown, in and around Pueblo County, or at Pueblo's Annual Chile and Frijole Festival in September. There Roasters set up in rows and pump out fresh roasted Pueblo and Anaheim Chiles all day long by the Bushel (or half bushel). The smells of that avenue during roasting season is heavenly for us aficionados. AaahhhhhW!New Mexico may have earned the title of "Home of Green Chile Recipes" we'll give 'em that, but I can attest to Southern Colorado's being a reasonably good contender for the "taste test contests" any-day! In fact, my award winning "Elk Green Chile" (Wild Meats Category) is but one of 100 of local versions (Private and/or Public), this region of Colorado, and every community along the way on Hi-ways 50, I-25, & 160 from Kansas line to Cortez has its version. Not to mention every restaurant having their own Family (Originated) Version many decades old, and all with followings of droves of Loyal Customers that sustain their businesses. It's been said that "in Pueblo" you can find a Restaurant that will serve you Green-Chile on almost anything from Ice Cream to Chinese Carryout, and I do not doubt it. Pueblo is Colorado's Melting Pot, and we take the best of each ethnicity & their proud cultural attributes, then present and display them proudly. We are Pueblo Green Chile Addicts, the majority of us. Come see, bring an appetite!

Good for green chile lovers
A lot of these recipes are on the pedestrian side, but I never would have thought to fix green chile that way. Plus they can easily be adapted to your taste. So all is good.

Yummy!!!!
I absolutely love the recipes!!!! My husband grew up in New Mexico and we have the green chiles shipped to Wisconsin. There are alot of really good recipes in this book!!! Love making them!!!!

Green Chile Rocks!
Great recipes!! I love green chile and this book is right up my alley. My husband has made several of the recipes, including green chile stew which has become one of my favorites!

great lttle cook book
A variety of easy to prepare chile dishes. using pantry staples. There were comments that it did not use a lot of fresh ingredients but fresh chilis etc could easily be substituted if you have access to them. I grown them and will use this cookbook for some new ways to eat them.

Exciting Eating
The book has many wonderful recipes. It is an exciting adventure in eating. All that I have tried have been great. I have received numerous compliments, especially on the "Chili Cheese Squares" pg 41.
