KitchenCraft Apple Farm Hand-Finished 'Portia Pig' Round Ceramic Pie Dish, 26 x 5 cm (10" x 2") - Cream / Sage Green

I had my eye on this pie dish for a few weeks before actually buying it, and I’m so glad I did. The Portia Pig design is beautiful and really amused my piglet of a dad, who loves a nice fruit pie.The diameter of the inside rim at the top is 23cm (9"). The 26cm (10") aspect of the description takes into account the rim too. The dish is 5cm (2") deep.A standard 23cm wide (9") by 4.5cm deep (1.3/4") recipe fits easily inside, so you’re able to level the filling and have a flat pastry top. Along with the pastry base, it held 1.2kg (2 lb, 10 oz) of frozen, thawed then cooked down cherries, plus their thickened juice, sugar, spices and a shot of brandy. I’d say it’s a little deeper than a standard dish, but not quite a "deep dish". If you like a heaping fruit pie for example, you will need to increase the filling part of your recipe. The dish, filled with water, comfortably holds 1.25 litres (44 fl oz).I tested the dish by baking said cherry pie, at 180°C, in the middle of my fan assisted oven (Gas Mark 6, 200°C conventional oven, 400°F) for a total of 1 hour 50 mins. This didn’t upset the glaze or integrity of the dish, or the Portia Pig print! The pastry base browned evenly, roughly the same colour as the top and held together nicely. I think I’ll get away with 10 mins less oven time from now on, as the pie was pretty well done, even though it’s top was covered with foil for an hour! Still, I waited for the filling to bubble through the vents for 10 mins to ensure it’s centre was cooked. I was also able to twist the finished pie within the dish, so knew it hadn’t stuck to the bottom.Every dish acts differently though, and I am comparing Portia to my glass Pyrex and ceramic Pyrex dishes which are slightly shallower at 4.5cm, so pies baked in them require less oven time.The pie, once cool, was covered in foil and placed in the fridge, and the pastry remained crisp all weekend! Cutting the pie and lifting portions out with a cake slice worked well too. No collapsing or soggy bottom! No scratches to Portia either!Baked-on fruit did not stick to this dish, and that can be a nightmare to shift! A little scrub by hand with a nylon scourer, in hot soapy water, lifted all traces.I also noticed the spacing of the wavy fluting around the edge of the dish allows you to perfect your crust crimping. Just rest your finger and thumb of one hand in two waves, and push a finger from your other hand in the middle. Et voila! Perfectly spaced crimping!I’m very pleased with this purchase, and would recommend this dish to anyone, not just piglets!

Wer eine klassische englische/US-Pie-Form sucht, findet hier ein exzellentes Modell: Nicht ganz so niedrig wie viele andere Formen, mit dem klassisch gewellten Rand. Das Schweinchen am Boden der Form ist entzückend; die Qualität des Materials tadellos (soweit man das nach bisher vier Backgängen beurteilen kann).
