Yes, this is the appropriate Insinkerator filter for the HC1100

Does a used filter just increase the filtration process and just slows down the water flow. Surely no impurity’s should be getting through?

These filters work well for my hot tap. After 6 months I notice both a change in flow and taste. So I would say from the taste change that it doesn't filter as efficiently. I change my every 6 months as per the manufacturers recommendations.

There was a lot of transparent gel or glue under the red cap. Is this normal and what's it for?

I bought a twin pack from Amazon in Feb this year (2021) and not only did the filters have have the gel-like substance on the cap but they also had a few drops of water dripping out of them once the cap was removed. It’s outside of the Amazon returns window now so I contacted Insinkerator regarding this and they confirmed there shouldn’t be any gel or water present. Ordered a new set from Insinkerator on a subscription now via their website.
