I apologize for the stupid question but is there a difference between just the steel cut oatmeal vs the steel cut oatmeal cereal? And which is better?

Essentially, they are equivalent in most categories. Regular 'oatmeal' are oats that have been steamed, rolled flat and toasted with changes the flavor a bit and allows them to cook more quickly. Steel cut oats have slightly fewer calories, a lower glycemic index and take longer to cook. They take about 20 minutes to cook and I let them sit covered for 5 minutes prior to eating. When I cook them I add dried fruit and nuts and often will add some creamy buckwheat cereal, also a Bob's Red Mill product. Hope this answers your question.

Can someone tell me what the shelf life of these are (how long away was the expiration date)? I don't eat it every morning!

I keep a backlog of about 5 bags. No problem with shelf life. To be honest I never look at the expiration date except to make sure I'm preparing the oldest first.

Is it normal for these to be a bit hard after cooking?

Yes and no. They must be cooked for 45 min. 1 cup steel cut oats to 4 cups water. Check often and stir. I use a lid, but not on tight and keep the burner low, just simmering. Then stir well and leave lid on to steam. The oats will be soft this way, but with substance. Since this takes so long, I cook them a day before, cool, store in frig, then warm desired portion in microwave the next morning. Yummy and good for you.
