What is the thickness?

It's 1 inch thick where the brick is, it's about 3/4 inch thick where the grout lines are

There are several ways you could cut it because it's just dense Styrofoam. Use a hot wire cutter, keyhole saw, box cutter, etc

Would this handle heat okay if I put it around my fireplace?

I’m not sure. I’ve only gotten the sample so far. Maybe get a sample and give it a test run? I’ve got my sample outside to see if can handle the Oregon weather. Holding up pretty well through the rain.
