Does the funnels detach?

Yes, the funnels are separate pieces. The kit doesn't include a stand though. My personal recommendation is to get the funnel stand part from the 1/144 high grade model and hope it fits. Haven't done it myself, so take my advice for a grain of salt.

I am not sure. I bought it for my nephew. I think it's about 4 to 5 inches. It a very good size. Good buy. Quality product. If you want to place to display like my nephew, buy the stand for it. It can stand on it own but with the stand it's look nicer. Good luck!

can this kit be customized with different parts from other models

Depending on the joints used in different kits, the answer would be "sometimes". I have most of the RG models, and yes, some parts are interchangeable, like arms, legs, shoulders, back-pack / wings. But it really comes down to specific models. Or if you are more skillful, you can adapt it by cutting the pieces.
