Yes search for double ended bars and you'll find what you're looking for. A man running a saw on both ends makes your milling a lot faster and easier. You can also just mount a helper handle to a double ender bar so your buddy can help pull the saw along with you

Q: I have a 251 stihl chainsaw, 16 lnch bar. Would this work okay or should I get a bigger saw and if so, how much bigger?

Your saw will work just fine but you will be limited to the size of the trees you can slab. You lose about 3 inches (of your16inch bar) by having the mill clamp onto the bar. On my 24 inch Husq., I removed the pivot teeth to get an extra inch or so and with the clamps set as far apart as I could get them, I can move through about a 21 inch trunk.
