Vit c is absorbic acid. Glycerol is monostearate..

I bought the unflavored, creates a lot of CO2 type pressure. Do the flavors have the same chemical reaction, and i just didn't notice?

The first couple I bought did not have the CO2 effect. The last few did. I liked the ones without the CO2 effect since I use a shaker and it makes a mess after shaking it. Plus it’s was easier to drink also.

Is it normal for this thing to come clumpy and wet?

No it is not normal. Moisture must have gotten into it. I would return it and get a new one as it won’t be good anymore in that condition.
