Yeah, that's right. The Prep Plate keeps you from having to touch the raw meat, plus it keeps the edge of your bag clean, which is important if you're doing sous vide. If the bag isn't clean, you might not get a complete seal when you vacuum packaging it, which means water could leak into your bag when you are trying to cook it in the water bath.

Q: How big a bag works with the plate?

To use with very small bags, you can use only one support plate. However, this will work easily with medium and large bags.

Q: What are the dimensions of the removable "fingers"?

The removable fingers are 8”x2”. The mounting hook is 2”x2”.
