We love heritage steel
We have slowly been updating all of our pans from Teflon to stainless steel these pants are far superior than the cheap aluminum or Teflon pans and we are going to be changing over everything to Heritage steel after seeing the quality and having use these pants for several months now

As good as stainless steel gets - Should last forever.
I've been using this pan for a couple of months now, having switched from non-stick pans. I finally got tired of having to replace my non-stick pans after a few months. This pan should last longer than I will, and I have no concerns about teflon getting into my food. Though this pan seems expensive at first, considering it will last decades it becomes a bargain in the long run.Like many reviewers have already said, you have to learn how to season the pan and preheat it before each use. It is certainly more work to own than a non-stick pan, and it has taken some time for me to get used to it. By seasoning and preheating the pan, I've been able to cook eggs without them sticking, which I think is a good test. However some other foods have been sticking a bit, though cleanup is easy. If you are prepared for that, I think this is as good as a stainless steel pan gets, though I admit I have never used All Clad. Preheating this pan takes 5 minutes at medium heat on my stove, and I would not want a heavier pan or it would probably take even longer. I'm not sure how 7 layers is better than 3, but the heat does travel well up the sides of the pan.I'm not sure if the 316Ti is a true benefit or good marketing, but being a bit of a science geek, I dug into it a little and it seems like this is the highest quality, most corrosion resistant stainless steel available, the kind they use for medical implants. The weight is good, and the handle is comfortable and stays cool except for the inch or so next to the pan rim, which is not where your hand goes. There has been no warping whatsoever. Given the price difference, for my money I would opt for these over All Clad. I wish they sold an 8 inch pan with the 316Ti as an individual item (you can get it in a set).

Bad enough for me to get my good camera out, charge the battery and take a picture of this warped pan..update
I bought this pan mostly because of the positive reviews. Please don't make the mistake I did and buy this pan. It warps like crazy when heated. The pan bottom was not all that flat out of the box and wobbled a little on the stove top....but I fried a couple of eggs on med-low....not kidding, medium-low, and it bowed up like a rocking chair. It straightens out a little as it cools, but it doesn't take much heat to distort the pan bottom. What would it do on higher heat?I researched and researched, like you may be doing, to find a good 12" fry pan and it finally came down to a decision between all-clad and American clad....should have chosen then all-clad I guess. I really hoped I had chosen the perfect 12" pan but I'd rather use the cheap one I have hanging in my spare pan rack...at least it doesn't warp! Pretty disappointed in American Clad...look at the picture of this 'once used on med-low' pan. I mean, it's ridiculous...it sits like a rocker on a small spot in the middle of the pan bottom as you can see in the picture. And the stove was on low in the picture.Update:5-24-18: Rather than returning the pan, I contacted the manufacturer. They replied and customer service was great. They sent out another pan with no questions asked and I returned the bad one afterwards. Sadly, the new pan has the same problem...nice and flat when it's cool, but as soon as any heat gets applied, it bows up like a rocking chair. We all know you can't cook like that. Anyway, great customer service effort, but bad product with warping issues

Searingly Hot
I needed a skillet that can take high heat and not wimp out.All the rest of my skillets are pussies and can't be trusted with a high dollar steak.I bought it - no regrets.
