Can this hold the phone stable at a 90° angle?

Depends on how heavy your phone is. It can hold my iPhone 14 Pro at 90 degrees, but not sure why anyone would want it at exact 90. Smallest tap or bump could have it fall forward on its face. So long as the phones weight shifts back towards the base it’s very stable. Strong magnet, so it’s not going to fall off from the MagSafe connection.

Is there adhesive on the item to stay in place?

Nope. No adhesive. It uses a magnet to keep the phone in place which means you need to have a proper case like the Peak Design case

Does this work with Airpods or Apple watch?

The wireless charger stand can only charge your phone.

Does this get top heavy when your phone is attached? I bought a similar product from Mophie and when my iPhone is on, it falls over pretty easily.

The the chargers pretty heavy at the base and the angle is adjustable. It can hold a pixel 7 when the stand is at 90°. Anything beyond that and it will start to tip over. It can adjust from the phone being flat on the base to a 90° angle without an issue. If you start going over 90 though depending on the phone size it will start to tip.
