I grew these when I lived up in Eagar, Arizona, which was at 7000 feet above sea level and had really cold winters-- around 20 below zero every winter, and lots of dry winds at the same time. They were huge and strong and beautiful and once I got them growing they came back from the roots year after year. They were amazing. So, I think they like cold weather. But it also got a bit warm in the summer, and they did okay with it, too, as long it cooled down at night, which it did in the high elevations where we lived.

are these the leaves that can be eaten?

According to Google, you can eat the leaves and make coffee substitute from the roots. I haven't tried it... Yet
