A fiesta in your mouth!
Yes, this canned corn may have a questionable name. Yes, you may be doubting your judgment in ordering any canned food in bulk in the modern era. Yes, your neighbors may see your case of canned corn sitting on your porch and think you’re building a fallout shelter in your basement. BUT it’s all worth it. Why? What if I told you that these crisp, golden kernels and their colorful, complementary pepper dice are a minor miracle in your pantry? Mexicorn is no ordinary canned corn. First, the corn kernels boast a fresher texture and a ripe golden color, as if they have just been plucked from the cob. It’s magic! Where most have a soggy, deflated bite and appearance, these kernels are irresistibly crisp. You have to try for yourself! I’m not sure what kind of voodoo Green Giant is toying with here, but I’m here for it. Now, what really sets this south-of-the-border masterpiece apart from even the most delicious canned corn is the dice of colorful peppers. What bravado! This flavor confetti is made up of red and green bell peppers. The earthy, slightly sweet taste of pepper is the perfect partner to bed those snappy golden kernels. All that to say, I was once afraid that Mexicorn was going away for good. It had been taken off the shelves at my local grocery. Soon after, I couldn’t find it online. In my despair, I wrote to the Green Giant himself. Though I got no reply, I soon found my beloved corn on Amazon. I rejoiced and ordered two cases. Be bold. Be adventurous. Order a case of this delicious corn. Serve it up as a side for your Tex-Mex and Mexican-inspired meals: tacos, burritos, etc. But don’t stop there, try it cold in salads, on BBQ chicken flatbreads, as a colorful addition to grain bowls. Whatever you do, just let Mexicorn change your life.

A healthy way to get corn with a little extra flavor
I've ordered this several times. The cans are consistently all in good shape. The product is consistently what I'd expect from Green Giant brand, with good quality. The peppers provide a mild but noticeable bit of spice to the corn, making it less boring, but not needing spices or unhealthy salt to get that flavor, and at about the price of regular corn. For a bachelor who wants to eat a variety of vegetables regularly, but without the time investment or hassle of having to prepare and clean fresh vegetables or properly spice fresh vegetables, this is ideal. Just pop them into the microwave as is for a nice sized (7 oz) single serving of corn without the boring regular flavor of just corn.

Delicious, full cans, and sometimes hard to find in stores.
Delicious, and sometimes hard to find in stores. I am used to buying bags of chips that when you open them it seems like it's only half full, or opening a can to find it's 1/3 can just water, but that is not the case with the Green Giant Crisp White Shoepeg Corn. The can is packed full of corn with VERY little liquid in it, (I would say maybe a Tablespoon at most) I think that's why it stays crisper than most canned corn. The corn is delicious. We have one dish in particular that we use this corn for. We call it "The Corn Stuff" and it's always a huge hit. The recipe is 3 cans of the Green Giant Crisp White Shoepeg Corn, 1 stick butter, 1 brick Philadelphia cream cheese, and 1 finely diced jalapeno pepper, and a some ground black pepper sprinkled in. Throw it all in a saucepan and boil until well mixed and heated throughout. At that point turn off the heat and let it sit a few minutes. It will thicken more the more it cools, but it is DELICIOUS with just enough spice for most people (and mild enough for non-fire-eaters like myself.) Try it, you'll love it! It's become a standard at our big holiday meals.

dented cans
The product is very tasty and versatile for use alone or in more complex salads. Our records indicate that we've bought the 12-pack 11 times so far, so it's obvious that we are fans. We have begun noticing, however, that many of the cans are being sent out dented. Some quite severely dented. We'd like to see this problem addressed, as dented cans pose a risk of botulism developing.

What canned corn should be. Green Giant is missing a huge marketing feature in not pointing out this is non-GMO corn.

Hard to find item in grocery stores but available from Amazon!
We have used Green Giant MexiCorn for decades. It's great if you're looking for corn with some extra flavor to use as a side dish but it is also great added to salads (drained) or cornbread. We had to order 12 for the best price but it is approximately the same cost per can as the local grocery store but the store rarely has it in stock and Walmart never seems to have it. Thank you Amazon.
